CHRISTMAS FRUIT MINCEMEAT Print E-mail

Makes 2 cups


1 medium eating apple

1/3 cup dried prunes

1/3 cup dried apricots

1 cup sultanas

1/3 cup dried currants

1 tsp grated lemon rind

1 tsp grated orange rind

1/2 tsp ground mixed spice

1/4 tsp ground cloves

1/4 - 1/2 cup brandy or sherry

 
Mix all ingredients in a bowl.  Leave for at least 3-4 days before using, so that the flavours can develop.
